We thought you might like to see a few pictures of the team in action here at Chococo HQ in deepest (& not very sunny) Dorset as we make all your Christmas chocolates. it is the busiest time of year for us as we are making truly fresh chocolates and will be making fresh batches for our mail orders & our shops in Swanage & Winchester until Christmas week...when we say our chocolates are fresh, we mean it!
We will make thousands of moulded chocolates & truffles over the month of December and there will come a point at which we run out of time to make any more, so dont leave it too long to order if you havent done so yet - if your order is on our system, we will make chocolates for it!
These are the hands of Caroline, Amy & Rose dipping & rolling our fresh milk chocolate vanilla truffles (aka Melting Milks). The ganache (blend of fresh Dorset cream, Venezuelan milk chocolate & Madagascan vanilla & nothing else - no additives or preservatives), is made in the morning & once it has cooled, the team pipe them into small balls (as you can see in the front of the picture) & then they are ready to be dipped in more milk chocolate & rolled in the milk chocolate flakes. It takes many hours of work to make a batch of fresh cream truffles by hand....

& they have hand-piped 3,700 more of our various truffles to be dipped - including our 'Nutty for it'
here we go...! Each one is dipped in molten chocolate by hand & then.....
They are gently placed into a tray of chopped & roasted hazelnuts to be rolled into a truffle!
All your selection boxes are packed by hand by our team of ladies, most of whom work for Chococo year round & others who join us every Chrismas to help with the extra packing - we are like the Post Office in that respect!

Each one of our Fizzy Pudding chocolates (with spiced praline & popping candy inside!) are handmade & then hand-decorated with a blob of white chocolate & a naturally coloured sugar paste holly leaf on each one - it takes a long time to deocorate them all & there are hundreds in these pictures!
