Toffee Apple Chocolates with Liberty Fields

Toffee Apple is our new limited edition chocolate of the month for September, created to celebrate (if that is the right word after the lousy summer we have had) the impending arrival of the season of mists and mellow fruitfulness. As you know, we love working with local food & drink producers (& have done since we started Chococo back in 2002), using their creations as ingredients to create our unique fine chocolates and this chocolate is no exception.

We have teamed up with Robert & Vicky of Liberty Fields in Halstock, West Dorset working with their gorgeous apple syrup to bring out sweet yet fruity notes to this chocolate. They say that their apple syrup, which is made with 100% pure apples & nothing else, is Dorset's answer to maple syrup, and we would agree with them!

Robert & Vicky started planting their orchards in 2010 and they now make a number of unique apple-based products including the famous apple syrup, an apple balsamic vinegar, dessert cider (of course) and even an apple vodka!

Tim our chief chocolatier has had much fun developing this chocolate with co-founder Claire. We decided on a layered chocolate as a nod to the layer of toffee you get around a classic toffee apple, but this toffee caramel is obviously soft! Tim has added the apple syrup to both the caramel and also to the fresh Dorset cream and white chocolate ganache underneath, which he has also blended with a tart apple puree to give both flavour and a touch of fruity acidity to balance the sweet toffee caramel above. These delicious layers are encased in a Madagascar single origin dark chocolate dome which Jacqui has decorated with naturally coloured green cocoa butter speckles.

All in all, we are all chuffed with this new flavour for autumn and hope you all enjoy it too. It will be available to buy from our display cabinets in our chocolate houses from w/c 6th September and is available to order online in a single flavour box or will be in our selections until the end of October.
